The Pool Club from two, if you want to start slowly. A DJ in the lobby from five. Sparkling wine at six, and at seven a four-course dinner at Smith — cured scallop with horseradish and trout roe, lightly baked cod, rose-roasted Barbary duck, and a risalamande rebuilt from the ground up.

At ten the music changes and the floor opens. We keep going until we say thank you for tonight.
